Hi there, I found this recipe on a the net...can't remember the link but I thought I would share with you all. It is very yummy and so quick and easy to cook. I omited the butter. Hope you enjoy it  Salmon and Fennel 1 Can of Seafcol skinless and boneless salmon (200gm) 1 tablespoon butter 1 ½ teaspoon olive oil 1-2 garlic clove sliced 1 small fennel bulb sliced (reserve fronds for garnish) 1 small red capsicum cut into chunks 4 small tomatoes cut into quarters 1 Spanish (red) onion cut into chunks2- 3cups baby spinach leaves salt and fresh cracked pepper to taste 1. Melt olive oil and butter together in a pan over medium heat. Add sliced garlic and fennel, soften for ½ min. 2. Add capsicum, onion and tomatoes. Cover and simmer over low heat for 10 minutes. 3. Remove from heat, add baby spinach and salmon. 4. Place back on low heat, cover and simmer for 1-2 mins. Add salt and pepper to taste. Garnish with fronds.
