Well I'm very impressed with you adventerous ladies.  I think I will be making some of these for lunch, not sure which ones yet, but I will do something.

I wonder how it would go using a soup, egg white, Simply Fibre, tiny brocolli floretts or baby spinach and philly cheese. Would that work? I don't have any philly cheese but that could be fixed.  Just for a savoury treat.

Me giving it another go!!! Thanks Mally

Made the chocolate ones for lunch but I felt so full for the rest of the day...dont think I'll do that again.  Forgot to put sweetener in too so they were a little bland.  Never mind, however, I did love the cake type texture.

PS mine deflated also.

this morning i thought i would try something new for my lunchtime shake and turn it into mini muffins... BIG MISTAKE!!!!!!

i put egg white, SF, even a lil bit of sweetner and mixed it with a mocha shake.
baked them and they had a weird, bland taste as well as a horrid texture!

maybe i made them wrong, i'm not sure but i'm never ever going to mess with my shakes again!!!!!

I just had a good go of this baking for afternoon noon. I had heaps of veggies at lunch, so waited later for my shake.

I whipped two egg whites till they were in stiff peaks, I took out two heaped tablespoons out and added splenda to make a meringue. I made two lumps.

I took another two heaped tablespoons of beaten egg white, added psyllium husks (1 tablesppon maybe a tiny bit less), splenda sachet and coconut essence. I made another two lumps.

I put both of these on a tray lined with baking paper and they cooked really quickly, even though I had turned the temperature down to 120. Cooked in a few mins only.

With the rest of the eggwhite, I added a chocolate shake, 50 mls of water, some baking powder and some pyllium husks. I put it into 9 mini muffin tins that had been sprayed with canola spray.

These took a lot longer to cook, but turned out great and didn't even deflate, not one bit. I spread pantalicca ricotta onto of each muffin and sprinkled a splenda sachet over the whole lot.

Oh my goodness, it was all so good. Really divine. The meringues were fantastic just with splenda, I might add vanilla next time and make it into a more pavlova shape and keep the temperature even lower. I'll then use ricotta ontop blended with splenda, so it will be like a pavlova. I'll have to buy some strawberries.

The macaroons really did have a brown bread consistency - so much so that I will try making it flat (leaving out splenda) and and a square to see if I can get two usable pieces of bread out of it. I normally use two huge mushrooms when I want a hamburger, but I will give this a go.

The muffins were just totally divine. Really perfect cake texture when they had cooled, but appeared raw inside when still hot.

Thanks everyone for the recipe ideas, was just brilliant. I normally have my shakes blended with ice, so they are like slushies, but this was a nice change.

"Original Recipe…..
gigi_a_go_go
almost a brownie...
take one chocolate shake
mix with 50mls water into thick consistency
microwave for 40seconds and let stand a bit.

mix hardens a little and is like a hot brownie or chocolate pudding. Texture isnt fabulous, but it is a nice change and reminded me of cake."

I tried this one, but with a Strawberries and Cream shake, whisked in the water (50mls) then put it into a small bowl. Then i chopped up a TF Choclette bar (Milk) and mixed it through then nuked in the microwave. Then i turned it out onto a plate. The chocolate had sunk to the bottom so when served up it was like a strawberry cake with chocolate chips on top.

It was pretty good, just like eating a piece of cake (YUM!!!)
