Hi just 10

I did it tonight with a veggie casserole and put a large tablespoon of the Leggos riccotta and spinach sauce through it for the whole family....my hubby and kids love mashed cauli so I am lucky there....!

Glad you and your BF enjoyed it too!

Ok have an Idea on those salmon Patties...  if you use half the amount of Protien as Half portion of Salmon and the Other half as 1 Egg White (which will bind them) then let them sit in the fridge for a few Hours to set maybe this will work  ??? who's up for trying

Hi Ava,

I tried the Cauliflower Mash last night with my fish.  I can't believe how good it tasted.  I mashed mine up with a masher, added a couple of spoonfuls of Leggos Ricotta & Spinach stir through, and then added 2 spoonfuls of cottage cheese.

Yummmmy!!!!  Just like having mashed potatoes again. I am going to try a vege bake with this on top this weekend, just to see how it turns out.

Thanks for the great recipe, it's excellent. I'll let you know how it turns out.  Bye for now.

I’m glad this mash is working well for everyone who’s commented.

ShelleyK, next time I get the urge for salmon patties I will stick the mash in the fridge for a while to chill, I think that is why they bombed before as they were still a little bit warm and even though I did use an egg in there they just didn’t hold.

SuzieQ – isn’t it great to have the mash with fish. I’d had very little fish on TF prior to making this mash because in my mind if I was going to have fish then it should be partnered with either chips or mashed potato. I’m glad your enjoying the recipe and I hope your veggie bake was scrumptious.

I’ve been doing a little tweaking with the mash as even though I was steaming it, it still seemed to be a little waterlogged. So this evening I cooked it a different way – I microwaved it with no added water, there is so much water in cauli anyway I thought it can use it’s own water to create steam. I also gave it a light sprinkling of chicken stock powder before I nuked it. Then when I tossed it all in the food processor I added a tablespoon of butter (I’m going to get 4-5 serves out of this so I can deal with those few extra calories)…..they were a lot firmer and the taste was sensational.

Hi Ava

Yep I think that would be the go, Mum used to the mashed potatoes the night before and leave them cool then put them in the fridge overnight, I think the trick would be the get as much moisture from the cauli mash as possible!

I know we cant use it yet, but a 1/3 cup of Atkins bake mix is only 3g maybe when we are on maintenance?

I think I'll hae a go and make some this week...

Hope your weekend is going great!!!!
