If so, I was wondering if there are any recipies out there?

 I have the old fashion pudding steamer to try out, but many of the traditional puddings have heapd of butter, and flour.

 here's something I found while Googling lol maybe ask staff to look it over :O)

Last autumn I discovered that it was possible to make an “instant” steamed pudding in the microwave which cooked in a matter of minutes.  It is a perfect short cut; especially if your kitchen does not have an extractor fan to get rid of the clouds of steam, and 3 or 4 minutes of microwave time is going to cost far less in energy than an hour on the hob, an important consideration these days.

I wanted to make a zesty pudding  for spring so used a combination of lemon and cardamom, being egg and diary free this pudding is also cholesterol free, making cream an almost guilt free addition (this being the same logic that allows a pizza after the gym!).  The addition of the carrot adds extra sweetness and colour and by contributing to one of your 5 a day adds to the guilt free aspect of the pudding!

Lemon & Cardamom Steamed Pudding (Serves 4)

Lemon Cardamom Syrup
10 cardamom pods
4oz white sugar
1 lemon

Lightly crush the cardamom pods and remove the seeds, discard the cases.   Zest the lemon, then cut into quarters (you can juice it but boiling the lemon quarters in the sugar syrup will extract all the flavour and save you the time of squeezing the lemon and then washing the squeezer).  Add to a saucepan along with the cardamom seeds and sugar, add 1/3pt water, bring to the boil and simmer for about 15 mins. Cool, squeeze the lemon rinds and discard.

Whilst the sauce is simmering prepare the pudding.

Pudding
Wet Ingredients
2oz sunflower oil
1oz lemon juice*
3oz milk (I used soy)

Dry Ingredients
4oz plain flour
2oz sugar
zest of one lemon
1 tsp baking powder
pinch salt
1 medium carrot finely grated.
3-6 cardamom pods – lightly crush – discard the outside and crush the black seeds.

Place the wet ingredients into a jug and whisk.  

Place the dry ingredients into a basin, mix well, pour the wet into the dry and stir well until you have a smooth batter with no lumps.

Grease a pudding basin, add half the lemon syrup, and carefully pour the batter over, making sure the syrup is covered.  Cover with cling film and pierce once or twice.

Then microwave on full power until done It took 4 mins in mine, but as all microwaves are different cook in 1 min bursts until it has risen (I use a glass basin so I can see the pudding rise as it cooks) and a cocktail stick inserted into the middle comes out clean.    When cooked let it stand for a min or two.  Run a knife round the base; put a plate over the bowl and flip. the pudding should turn out, pour the rest of the syrup over and serve immediately.

 Note:  I adore cardamom and this pudding does taste strongly of it, so you may want to use slightly less than I have, maybe just the 3.

* Fuss Free Tip:  Freeze any leftover lemon juice in an ice cube tray, each lemon cube is perfect for adding to baking or for salad dressings.

Angie .. I was wondering do you have any of Annette Syms cook books .. they are the Symply Too Good To Be True series (Books 1-5) they are available at all newsagents and other places .. They are awesome for maintenance because Annette Syms makes traditional recipes but with the lowest possible calories/fat/carbs etc that you can make but still taste wonderful and like the full calorie versions .. this is how she started off originally making traditional recipes but making them the healthiest way she could and she lost a huge amount of kgs (her story is in the front of the books) .. I KNOW Mally will agree with me about these books as well .. try and check them out they are great .. here is a link to her website that she is very active on so you can have a look around at everything but most newsagents stock the books have a browse next time you are out Im sure you will find lots to eat in there http://www.symplytoogood.com.au/

ON TF MAINTENANCE SINCE 11/08/09 AND KEEPING IT OFF!

v  In 42 weeks (14/10/08 – 24/8/09)  TOTAL WEIGHT LOST 40.5 KILOS! 

v  I started at 110.4 kilos and dropped to 70 kgs. 

v  My waist measurement dropped from 98 cm to 74cm.  24CM LOST!

v  I started out as a size 18/20 top & 22/24 bottom.  I am now a size 10-12.

v  My BMI was 39.2 which was obese. I am now in a healthy weight range.
