Hi, my name is Vixxsin, and Im a savoury addict.

I have decided to try and make a healthy TF snack to curb my cravings and just made the following:

Zucchini Chips

Cut zuchinni rounds, beat an egg white, mix herbs and pepper into TF fibre, dunk the rounds into the egg whites then into the TF. I then pan fried them in a teensy bit of spray oil....though I think they would be bakeable, and go real crisp....

The outside was nicely crisp and they were very very yummy

Does that sound ok for a snack?? maybe team it up with some tzatziki?

I do something similar except I leave the egg out of the equation: chop eggplant into chips, sprinkle with garlic salt or even just sea salt (just the teensiest bit) a bit of olive oil spary in the pan, pop them in, turn, then serve such a lifesaver!

Hi, I have made these too as I have zucchini growing in my garden.  I don't use any egg, just olive oil spray and herb and garlic salt. Bake for about 15 mins.  You can also use eggplant in the same manner.  In fact, I prefer the eggplant because if you use a large one, you can make really chunky wedges! Excellent as a side dish with your protein meal or as a snack.  Enjoy!

Do they go crispy?? because I will be happy to get rid of the fiddliness of egg and fibre if they do   I wanted something that was crispy like a potato crisp.

Do you think baking zucchini in the oven on very low for a while will dry them out and make them really crispy??

I've tried zuchinni and egg plant chips on the BBQ. Even my family and grandkids love them.
