i have a lot of zucchini and im lookin for some good recipes i have lik 8 of them

try cutting them in half lengthwise, scouping out the flesh with a teaspoon, cooking a diced onion in some garlic, add some sliced mushroom,capsicum, the flesh of the zuchini, some seeded mustard ( couple of teaspoons ) add back into the zuchini cases and bake in a warm ( 180) for about 30 mins,

They are yummy

Also try zuchini soup.. its pretty good to

ohhh umm the stuff zucchini sounds yummmmyyyyy

zuchinni are the favorite vege in this house love them fried, grilled, with or without spices, stuffed, boiled, they are great in soups, stews, cassoroles

I make Ratatouille with them. delish.
Grill zucchini (sliced) and eggplant (sliced).
Heat pan with a little bit of oil, put in two onions (chopped roughly) for about 2 minutes. Then add in a few cloves of garlic (chopped finely). Also add in a roughly chopped capsicum and cook until the capsicum is soft but not brown. Add in the zucchini and eggplant, and a tin of chopped tomatoes. Stir until all combined and sauce starts to thicken. Then add salt and pepper to taste if you wish.

hi not very good at this fairly new and raw but i use zucchini as spaghetti i slice it on a mandolin or v slicer on julienne slicer long ways then use pasta sauce or meatball recipe which is in one of the cook books blanche the zucchini after you slice and drain it well then top with sauce works really well
