has anyone got any recipes to make a dip for celery and other vegies that is from the free list??

the creamy tomato one is REALLY yummy, i have made it a few times to take to things like parties, and stuff..

Heres some salsa receipes i found tht might help

 

Ingredients (serves 6)

 

3 x 250g punnets grape tomatoes, halved

1/2 small red onion, finely chopped

1 tsp chopped fresh red chilli

Pinch of sweetener

Method

 

Preheat oven to 180°C. Line a large baking tray with non-stick baking paper. Place the tomato, cut-side up, in a single layer, on the lined tray.

Bake in oven for 30 minutes or until soft and lightly browned. Set aside for 30 minutes to cool.

Combine the tomato, onion, chilli and sugar in a medium bowl. Taste and season with salt. Serve.

 

 

Homemade thick 'n' chunky salsa

 

Ingredients

 

1 tablespoon olive oil

1 brown onion, finely chopped

1 long red chilli, finely chopped

1 small green capsicum, finely diced

1 tablespoon tomato paste

500g tomatoes, diced

Method

 

Heat oil in a saucepan over medium heat. Add onion and cook, stirring, for 3 to 4 minutes or until soft. Add chilli and capsicum. Cook for 2 minutes or until tender. Stir in tomato paste and tomatoes. Bring mixture to the boil.

Reduce heat to medium-low. Simmer, uncovered, for 15 minutes or until thick. Remove from heat. Cool completely.

Notes & tips

 

Note: Salsa can be stored in an airtight jar in the fridge for up to 30 days.

 

 

Mango Salsa:

 

·        1 ripe mango, peeled, stoned and finely chopped

 

·         1 small red onion, peeled and finely chopped

 

1 red chilli, deseeded and finely chopped, optional

 

30ml/2tbsp freshly chopped mint

15ml/1tbsp freshly chopped coriander

Grated rind and juice of 1 lime

SALSA:

 

·         2 red capsicum, roasted, skinned and diced

 

·         1 tomato, diced

 

·         2 tbsp chopped coriander or parsley

 

·         1 clove garlic, crushed

 

·         1 tbsp lemon juice

 

·         2 tsp sweetener

 

 

 

 

 

 

 

·         2 avocados, diced

 

·         1 x 250 g punnet cherry tomatoes, cut in halves

 

·         1 red capsicum, diced

 

·         1 green capsicum, diced

 

·         1 red onion, diced

 

·         30 ml lemon juice

 

·         ½ cup cucumber, diced

 

·         

 

 

 

Hot Tomato Salsa

 

A fresh salsa recipe that is great with lamb cutlets

 

·         4 roma tomatoes,chopped

 

·         3 shallots

 

·         2 tablespoons sweetener

 

·         1 small red chilli-deseeded, finely chopped

 

·         1 tablespoon chopped coriander

 

·         ·  Spray pan with oil. Saute tomatoes and shallots and chilli for 2 to 3 minutes. Stir in coriander

 

 

 

Thai Cucumber Salsa

 

·         3 tablespoons fish sauce

 

·         2 tablespoons sweetener

 

·         1 lime- juiced

 

·         1 tablespoon sweetener

 

·         1 shallot- thinly sliced

 

·         1 small red chilli-deseeded, finely chopped

 

·         1/3 cup mint leaves, finely chopped

 

·         Serve with grilled prawns or chicken

 

 

 

Tomato, Red Onion and Balsamic Salsa

 

·         ·  2 ½ tablespoons extra virgin olive oil, 1 garlic clove, crushed, 1 tablespoon balsamic vinegar, 500g roma tomatoes, roughly chopped, 1 small red onion, finely diced, ¼ cup parsley- finely chopped

 

·         ·  Place oil, garlic and vinegar in a bowl. Add tomatoes, onion and parsley. Season with salt and pepper and stir to combine. Stand for 10 minutes. Serve with barbecued steak or lamb chops

 

 

 

Avocado, Lime and Coriander Salsa

 

·         2 avocado in a bowl. Spoon over 2 tablespoons lime juice. Toss gently to coat. Add oil, onion and coriander to avocado. Add Tabasco sauce to taste. Toss to combine. Stand for 5 minutes. Serve this fresh salsa recipe with chicken, pork or prawns

 

 

 

Mango and Chilli Salsa

 

·         2 chillies, seeded and sliced thinly

 

·         green shallots, sliced thinly

 

·         1 small glove garlic, crushed

 

·         1 ½ tablespoons lime juice

 

·         1 tablespoon fresh chopped coriander or ½ teaspoon dried

 

·         1 large mango, chopped finely.

 

 

 

Toss all together just before serving. Serve with grilled fish
