You can make a pretty tasty coleslaw with red cabbage, celery, red capsicum, and safe dressing (I use the paul newmans south west or cesar dressing). Shred everything fine so that it's all about the same size. It's pretty tasty and it's got a lot of crunch so it doesn't feel like you're eating soft boring veggies lol.

As for whether or not you have to eat them the vitamin thing is pretty important but a more noticable and often uncomfortable situation will happen if you don't eat enough... Constipation! Almost everyone faces it on TF at some point and I can tell you from experience that it's NOT fun. The more veggies that you eat the more fibre you get and it can help a lot.

Fresh capsicum is actually lovely raw You can also try roasted veges - carrot, capsicum & zucchini. Have you tried making chips out of zucchini - they are lovely! Grab a bit of garlic and olive oil spray, put them in a fry pan and lightly fry slices of zucchini, it's actually really nice and this is coming from someone who used feel sick at the thought of zucchini! Can also be done with eggplant as previously mentioned.

With those veges you do like - carrot, broccoli, capsicum, what about a little stir fry? Doesn't take much to chop them, throw them in a wok with some garlic, water, a bit of ginger and some soy sauce.
