| Hey, i have been looking for a vegetarian sushi recipe to have for lunch. Does anyone have one that they can share? Thanks

Re-started TF after gaining back the weight I had lost. Mini Goal Challenge- Lose 4.4kgs (to weigh 60kgs) before xmas

| I dont have a receipe to share, but have you tried using cauli rice instead of using the normal rice to make the sushi?

| Hi, Yes that was the recipe I was meaning - the Cauli Sushi. I prob should have mentioned that

Here's the recipe for the sushi I made last year Turkey Avocado Sushi Seaweed sheets 1/2 cup grated/processed cauliflower 1/4 teaspoon of whole egg mayonaise splash of rice wine vinegar strip of Hans 97% fat free turkey breast Julienne strips of avocado Method Microwave the grated cauliflower for 3 minutes, then add the mayonaise and rice wine vinegar. Mix well till cauliflower rice is sticky. Lay your seaweed sheet down and thinly spread the cauliflower rice, leaving a 1/2cm stip down one side. Place thin strips of the Turkey breast meat and avocado on the cauli rice, moisten the clear strip of seawed sheet and roll the sheet up to make your sushi. Serve with lite soy sauce. Its yum - but I put too much cauli rice on the nori sheet and it didn't roll up all that neatly. tasted great tho. **************** ohh and i found this idea too

In response to your question, you may eat sushi as long as you take into consideration that the vegetables and salad products are on our allowable list and that you are calculating your protein serve for the day as well as ensuring that any salad dressings and condiments are TF friendly. Seaweed sheets are fine to have on our Program, providing you eat them with TF friendly vegetables and protein. A recipe idea would be to cook up some cauliflower rice, slice up some vegetables such as carrot, cucumber or avocado and add tuna or chicken and make into a sushi roll. | here's some recipes I found in my archives.... "Sushi" - but just for a treat :-) Viva_the_Diva After reading a recipe that Patko posted for fried rice I’ve been thinking about sushi and this is what I came up with. Shorty has run the recipe past the TF Nutritionist and came back with this comment: "After speaking with one of our nutritionists, she has said that you can have this "sushi" dish but only as a treat once per week as seaweed can be a bit high in carbs, it will add to your energy intake for the day and can be quite high in sodium (salt). Some alternatives would be to use cabbage leaves, spinach or silver beet." 170gms Chicken (I used tenderloin, but breast would work just as well– This gave me enough protein with the 2 eggs for Hubby and me) 2 teaspoons Soy Sauce 2 teaspoons Fish Sauce – optional, this is technically not allowed but I used this tiny amount, 1 teaspoon minced garlic 1 teaspoon minced ginger 1 teaspoon minced coriander 1 teaspoon oil – optional, I used olive 500gms cauliflower (approx) 2 Eggs ½ teaspoon chicken stock or vegi salt – optional 2 Tablespoons Mayo – optional 2 Seaweed sheets
Start by marinating chicken in the next 6 ingredients while preparing the cauliflower Grate or blitz the cauliflower in a food processor until it is about the consistency of cous cous. Saute in a wok or pan for about 4 or 5 minutes. Lightly beat the eggs and stock (if you’re using it) and add to the cauliflower. Cook stirring constantly for about another 4 or 5 minutes, until the egg is cooked. Transfer to a bowl and set aside. Cook the chicken, with the marinade, either in the wok or under the grill until the chicken is fully cooked. Stir mayo through the cauliflower mixture. Spread cauliflower on the seaweed sheets – 1 sheet per protein serve. Place Chicken and any other filing you like (I used cucumber) down the centre and roll up. Slice and enjoy! I actually found that there was too much to make it all into sushi so I just served the leftovers on the plate with a salad. Totally yummy!

| ok pg 133 of cookbook 2 ingredients 500g cauli 1tbsp olive oil 2tbs equil or splenda .25 teasp salt 2tbs rice vinegar 3 nori sheets filling options .5 avocardo, thinly sliced 1 lebanese cucmber but into thin batons .5 sm red capsicum, deseeded and cut into thin strips to serve soy sauce method cut cauli into small peices and process in a food processor until it is a cumbly like consistency heat oil in wok over med heat, add cauli and cook stirring until it is softened place teh cali in large boowl. combine sweetner, salt and vinegar and pour over teh cauli, stir to combine place a sheet of baking paper on a tray and spray the mixture over it. Allow it to cool completely place a nori sheet, shiney side down on a bamboo mat or a sheet of baking paper. With wet hands spreat .75 of a cup of the cauli over the lover two thirds of the nori sheet. In the middle of th rice arrange your choice of filling. brush the uncovered edge of the nori sheet with water, then carefully lift the edge of teh mat or paper and roll away from you enclosing the filling. continue rolling forward until roll is formed and gently roll back and forward to neaten. allow to rest repeat with the remaining nori sheets. Using a sharp knife cut the roll into 2cm thick slices. serve with soy sauce
